Now, this isn't intended to be a 'which is best' argument, but a comparison of the 2 different versions of the Galactica. I've got specs for the TOS Galactica up at http://ikvdevisor.com/specs/battlestar.htm and there are 2 other stat sets posted somewhere here. What I'm looking at is, comparing all the neat technical bits from both shows and seeing what we come up with.
So, anyone up for some friendly research? :)

I recall they were supposed to have 4 or 5 nukes left before Peggy showed up but last nights ep indicated they have a lot more than that now since Adama ordered Nuclear Ground Strike Misiles in the Launch Tubes 4 through 10.
I'll see what I can find for the TNS info.

Adama may have ordered some munitions balancing that we don't know about.

There is also the question of if Lee quick-offloaded extra ammo,, etc b4 taking the Pegasus on it's last mission.

Yup that was my assumption or even when the Peggy was sending over supplies to restock the Galactica. It makes it tough though for us to have any idea just what Adama has now in stock in terms of amo.

Lee offloading the extra ammo is the quick easy answer. We know the Battlestars can make their own fighter ammo and it would make sense if the CIWS's use the same ammo, so it isn't that big of a jump to say that either the Galactica or one of the industrial ships in the fleet couldn't make shells for the main cannon, and making a nuke isn't that hard once you initially figure it out.
